Vegan cocoa sugar cookies are crisp and taste chocolatey delicious – and they were voted the favourite by my family!
This is the first of 4 easy recipes for vegan cookies that don’t require any special ingredients. It’s the holiday season, and it’s nice to make things that are simple that don’t require a visit to a specialty store to find dairy and egg substitutes. This recipe requires five ingredients – including vegan margarine – which we always have on hand anyway.
We used Vegan Becel margarine, but any vegan margarine or butter will do. Make sure that the margarine is labelled “Vegan” as most margarines seem to contain milk products (when you read the small print) even though they are labelled as made from vegetable oil.
Our daughter is visiting for a few days before she jets off to another destination. She is vegan and we are always trying to tempt her with treats while we can. Instead of making Christmas cookies this year, and throwing in a few vegan cookies – I thought, why don’t we make them all vegan? Her non-vegan brothers eat all the cookies anyway! No one ever knows the difference.
The ingredients are: vegan margarine; all purpose flour; brown sugar; vanilla and cocoa powder. Thats it!
The vegan margarine is already soft and therefore blends easily with the dry ingredients. Form the dough into small balls, roll in granulated sugar – flatten the balls and place on a parchment lined cookie sheet – and pop them in the oven.
