An easy recipe for Vegan Butter Pecan Cookies, with only five ordinary ingredients.
This is the second of 4 easy recipes for vegan cookies that don’t require any special ingredients. It’s the holiday season, and it’s nice to make things that are simple that don’t require a visit to a specialty store to find dairy and egg substitutes. This recipe requires five ingredients – including vegan margarine – which we always have on hand anyway.
We used Vegan Becel margarine, but any vegan margarine or butter will do. Becel has a fairly salty flavour – if you are using a less salty flavoured vegan margarine – you may add a pinch of salt to this recipe. Make sure that the margarine is labelled “Vegan” as most margarines seem to contain milk products (when you read the small print) even though they are labelled as made from vegetable oil.
This recipe requires 1 Cup all purpose flour; 1/2 Cup Brown sugar; 1/2 Cup Vegan Margarine; 1 tsp Vanilla and 1/2 cup pecans chopped (with whole or half pecans for tops of cookies).
To make the cookies: Line cookie sheet with parchment paper, and preheat oven to 350 degrees F. Mix or blend all ingredients except for pecans. (The Vegan margarine is already softened and easy to blend with the flour, so it’s easy enough to blend all four ingredients together at once.). Stir in chopped pecans.
Roll teaspoons of dough into balls and flatten on prepared cookie sheet. Place a piece or whole pecan on top of each cookie to decorate.
Bake at 350 degrees for 15 minutes.

That’s it – “buttery”, crispy little cookies made with un-fussy ingredients!
